Ingredients:
- 2 cups mixed vegetables (carrots, peas, beans)
- 1/2 cup JUST Dairy Paneer, cubed
- 2 tbsp JUST Dairy Ghee
- 1 onion, finely chopped
- 1/2 cup coconut milk
- Spices: cumin, coriander, garam masala, turmeric
- Nuts (cashews or almonds) for garnish
Instructions:
- Heat JUST Ghee in a pan and sauté the onions until translucent.
- Add the mixed vegetables and cook for a few minutes.
- Stir in the spices and cook for another 2 minutes.
- Add coconut milk and simmer until vegetables are tender.
- Gently fold in the cubed paneer and cook for an additional 5 minutes.
- Garnish with chopped nuts and serve with rice or parathas.
